Comfort Carrots on a Spoon

The food is the best for you when it is still full of color and life, and basically plant-based.  I call it life-friendly food - friendly to you, to nature, the environment and all! Carrots are one of the best representatives and they are a beauty tonic as well as a comfort food.

HOW I MAKE THE CARROT SOUP…

  • carrots
  • non-diary butter
  • curry
  • salt
  • water/rice milk/coconut milk

 

I clean the carrots and grate them. I sauté them on butter, season with curry and cover with the desired liquid to make a soup. I add salt and cook.

 

AndCucumber raita

 

  • cucumber
  • soy or coconut yogurt
  • parsley
  • vegan mayonnaise
  • black pepper
  • salt

 

I peel the cucumbers, grate and strain them. I put them in a bowl, add yogurt and mayonnaise and season with chopped parsley, salt, and black pepper. I mix well.

 

COMBINE THE TWO

I pour the soup in a soup bowl and add a tablespoon of yogurt in the middle. I decorate with parsley and serve with warm bread.
