This is the simplest version of roasted red pepper spread like our mothers used to make and the whole street was filled with their aroma. Let it fill your kitchen!
I clean red pepper and cut it to small pieces. I put it in a saucepan on hot oil and sauté on medium heat for approx. 15 minutes (depends on the quantity of red pepper) so that the peel does not burn. I add salt and black pepper and blend it.
The aivar goes well with fresh or toasted bread, white sirene or feta cheese and good olives. I use it as a delicious spread for different sandwiches, for example, home-made Seibab sandwich.
This is the quickest way to get the taste of the real deal roasted red pepper aivar just as our Balkan mothers make it. If we don't have enough red peppers, eggplant and tomatoes can be added. We sauté all the vegetables well and blend them. Some chopped fresh parsley would go along nicely too.
